Lentil Soup for 2 Kids

  1. In a pot, put the oil, the onions, paprika and garlic over low heat. (let that cook for 2-3 minutes)
  2. Add the water then turn the heat up to high
    1. if you want to make the lentils mushier, then add more water
  3. Once it begins to boil, add the lentils, the potatoes and salt
  4. Once everything softens in the pot, it will be done.


Tips:

  • I recommend soaking the lentils half an hour before you start cooking so they can be softer for your child (I often put them to soak the night before)
  • You can add small pieces of carrots or celery (cut in very little pieces) when adding the onions if you want to sneak in vegetables
  • Instead of dry lentils, you can put fava green beans, but take off the shell
    • if you do this, you can a little bit of creamed milk (about a trickle)
  • Instead of dry lentils, you can put angel hair pasta.

Ingredients

○ 1 Welsh Onion  (chopped in little pieces)

○ 1/4 Pound of Dry Lentils 

○ 1 Small Cubed Potato

○ 1/2 teaspoon of Powdered Paprika

○ 2-3 Spoonfuls Coconut or Olive Oil

○ 1 Crushed Garlic Clove

○ 4 Cups of Water 

○ Salt (the amount is to your liking)
